1 pound sliced bacon 3 cans (15 ounce size) pork and beans, well drained 1 cup barbecue sauce 1/2 cup brown sugar 1/4 cup finely chopped onions 1/4 cup finely chopped red or green bell pepper 1/4 cup finely chopped celery 3 teaspoons minced garlic 3 tablespoons prepared spicy mustard 2 tablespoons hot sauce, or to taste

Preheat the oven to 350 degrees F.
Heat a skillet over medium-high heat. Coarsely chop half the bacon and add to the skillet. Cook, stirring frequently, until the fat is rendered and the bacon is starting to get crisp. Remove from the skillet with a slotted spoon and place on paper toweling to drain.
Combine the cooked bacon, beans, barbecue sauce, brown sugar, onions, bell pepper, celery, garlic, mustard, and hot sauce in a bowl. Mix well. Transfer the bean mixture to a 9x13-inch baking dish.
Place the remaining bacon slices over the top of the bean mixture.
Place the baking dish in the oven and bake at 350 degrees for 45 minutes or until the bacon strips are cooked.
Remove the Cajun baked beans from the oven and let stand for 15 minutes before serving.
