2 cups mashed potatoes
2 eggs, beaten
directions
Heat 1-inch of oil in a deep skillet over medium-high heat.
Mix together the mashed potatoes and eggs in a bowl (if the mashed potatoes are unseasoned, add salt and pepper as desired).
Drop the potato mixture by spoonfuls into the hot oil. Cook, turning as needed, until browned.
Remove the browned potato puppies to paper toweling to drain. Serve hot with ketchup or sour cream, if desired.
