What do you do with leftover mashed potatoes? Try potato croquettes! They're crispy on the outside and fluffy on the inside, and make for a great appetizer or side dish.
leftover mashed potatoes
shredded cheddar cheese
beaten egg
breadcrumbs
oil
Adjust amounts as desired. No exact measurements needed.
Combine leftover mashed potatoes with shredded cheese. Do not overmix. Form spoonfuls of the mixture into patties and place on waxed paper.
Heat some oil in a skillet over medium heat.
Place the beaten egg in a shallow dish. Place the breadcrumbs in another dish.
Carefully dip each potato croquette into the egg mixture, letting any excess drip off. Then dredge in the breadcrumbs.
Place the croquette into the heated pan and cook, turning as needed, until browned on both sides. Remove the browned potato croquette to paper towelling to drain. Repeat with remaining croquettes.
Serve the leftover mashed potato croquettes immediately with any desired condiments (ketchup, sour cream, etc).
Waxed Paper: For shaping and holding the mashed potato mixture that has been formed into patties before they are cooked.
Skillet: To heat oil for pan-frying the potato croquettes until they are golden brown on both sides.
Shallow Dishes: One dish is needed for holding the beaten egg, which the potato croquettes will be dipped in before being coated with breadcrumbs. Another dish is needed for holding the breadcrumbs.
Tongs or Spatula: To carefully flip the potato croquettes in the skillet while cooking to make sure that both sides are evenly browned.
Paper Towels: For draining the excess oil from the potato croquettes once they are finished cooking.
Condiment Dish: A dish for serving condiments such as ketchup or sour cream alongside the mashed potato croquettes.

Thanks so much for the recipe, it was great! I had all of these leftover mashed potatoes from a trial run for Thanksgiving and these prevented me from throwing them out. MMmmmm Thanks!
When I was younger my mother would make these too, but she would add parmesian, garlic and parsely roll them oblong and then roll in italian bread crumbs and fry them up. They were soooo good.

I've made something very similar, but I added julienned carrots and onions to the croquettes. They were great!

Easy ... I changed it a little, and made the "pancakes" into "golf balls" and deep fried them! Rick
