Roasted Cauliflower With Tomatoes And Garlic

ingredients
2 tablespoons olive oil
8 cloves garlic, unpeeled
1/2 teaspoon dried rosemary, crumbled
1 head cauliflower, cut into florets
1 1/2 cup chopped plum tomatoes
1/2 teaspoon salt
directions
Preheat the oven to 425 degrees F.
In a 13 x 9-inch glass baking dish, combine the oil, garlic, and rosemary. Place in the oven and when the oil is hot but not smoking, add the cauliflower. Roast, turning the cauliflower occasionally, for 20 minutes or until lightly browned.
Add the tomatoes and salt, tossing well. Roast for 20 minutes or until the tomatoes are piping hot and the cauliflower is tender.
