It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Cauliflower is pre-cooked whole, then coated with a mixture of mayonnaise and mustard then covered with shredded Cheddar cheese and baked until bubbly.
1 whole cauliflower
salt
1/2 cup mayonnaise
2 teaspoons prepared mustard
3/4 cup shredded sharp Cheddar cheese
Precook whole cauliflower in boiling, salted water 12-15 minutes. Drain.
Place on ungreased shallow baking pan. Sprinkle with salt. Combine mayonnaise and prepared mustard and spread over cauliflower. Top with shredded cheese.
Bake at 375 degrees F for about 10 minutes, or until cheese is melted and bubbly.

Delicious! I skipped the mustard and used a little cayenne in the mayonnaise instead.

I've used this recipe from my mother for years. The only change I would make is instead of using prepared mustard use dijon - it's wonderful!!!!!!!!!
