Fresh cauliflower is baked topped with a cheddar cheese sauce making a side dish that goes with almost anything.

1/2 head cauliflower, cut into florets
2 tablespoons butter
1/3 cup chopped onions
1 cup heavy cream
2 cups shredded Cheddar cheese
1 egg, beaten
Preheat the oven to 350 degrees F. Lightly grease a 8x8 baking dish.
Heat a pan of water over medium-high heat. Bring to a boil. Add the cauliflower and cook for 3 minutes. Drain well. Place the cauliflower in the baking dish.
Meanwhile, heat the butter in a skillet over medium heat. Add the onion and cook, stirring, until the onion is soft. Remove the pan from the heat. Stir in the heavy cream, cheese, and egg and mix quickly to combine.
Pour the cheese mixture evenly over the cauliflower.
Place the baking dish in the oven and bake at 350 degrees F for 40 minutes or until the cauliflower is tender.
Serve hot.

I loved this!! Next time I am going to try to mix several cheeses so that it is not all chedder, but this was a fabulous tasting way to stay low carb!!
