1 cauliflower, cut into florets
1/2 lemon
1 cup milk
2 tablespoons butter
2 tablespoons flour
1/2 cup grated Cheddar cheese
1/4 cup minced green onions
toasted almonds
Cook cauliflower and lemon covered, in boiling water until tender, about 20-30 minutes. Drain. Discard lemon.
Melt butter, stir in flour, and cook, stirring for several minutes. Pour in milk, stir until smooth, then add cheese and onions. Cook gently, stirring until cheese melts. Pour over cauliflower and sprinkle with almonds.
