ingredients
1 package artichoke hearts, frozen
1 cup mozzarella cheese, shredded
4 eggs
1/2 cup grated cheese
1/2 cup pepperoni, diced
1 pie shell (9 inch size)
directions
Cook artichokes, drain and cut. Beat eggs thoroughly and add all ingredients. Mix well and pour into 9-inch pie shell.
Bake at 375 degrees F for 45-60 minutes. May be frozen after baked. Serve as part of antipasto or as a first course.
