- add review
- #48848

30-60 minutes
ingredients
2 tablespoons olive oil
2 tablespoons butter
1 pound fresh Brussels sprouts, trimmed and halved
3 Granny Smith apples
1 red onion, peeled cut into 1/4-inch wedges
1 teaspoon ground black pepper
1/2 lemon, juiced
6 fresh thyme sprigs
1 cup apple cider
directions
Preheat oven to 425 degrees F.
In a roasting pan, melt butter with the olive oil. Add the sprouts, apples and onion. Season with salt, pepper, and lemon juice. Stir.
Roast about 30 minutes. Vegetables should be tender. With a slotted spoon, transfer the vegetables to a serving dish, cover and keep warm.
Place pan over medium high heat. Add apple cider and cook, scraping up browned hits with a wooden spoon. Reduce cider slightly, about 5 minutes.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

reviews & comments
This looks like a tasty recipe...unfortunately, one of the ingredients listed is not accounted for in the cooking directions. I suppose the thyme should be added with the other seasonings before roasting, although it is possibly intended to be added to the cider while deglazing.
