Cuban Black Beans and Rice

ingredients
1 pound dried black beans
1 medium onion, chopped
1 clove garlic, minced
1 tablespoon fresh rosemary
1 tablespoon vegetable oil
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 large bay leaves
Tabasco sauce, to taste
steamed white rice, for serving
directions
Place beans in a large pot or Dutch oven and cover with water by 1 inch. Bring to a boil, cover, remove from heat and let stand for 1 hour.
Add onion, garlic, rosemary, oil, salt, pepper and bay leaves. Stir well to combine.
Return to heat, bring to a boil, reduce heat, cover and simmer until beans are tender, about 1 hour. Add Tabasco sauce to taste, if using.
Serve over steamed white rice.
