Mushroom Almond Wild Rice Casserole

ingredients
1/4 pound bacon, chopped
2 cups sliced fresh mushrooms
1 cup wild rice, rinsed
2 tablespoons chopped green onions
1/4 cup white wine (optional)
1/2 cup blanched slivered almonds
3 cups chicken broth
directions
In large fry pan over medium-high heat, cook bacon. Add mushrooms, wild rice, green onions and wine. Stir until combined. 
 Reduce heat to medium. Cook, uncovered, 10 minutes, stirring frequently. Add almonds. Mix well. Cook additional 10 minutes. 
 Transfer rice mixture into 2 quart baking dish. Stir in broth. Cover. Bake at 325 degrees F for 1 1/2 to 2 hours or until rice is tender.

This is a great dish and I always cook for thanks giving and xmans dinners. It's an added over mashed potatoes which I find filling and wild rice dishes allows me to eat more of the good stuff...turkey, dressing, squash and other great fixings.
