Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

With a superstar ingredient like Dungeness crab, keeping it simple and letting the crab shine through is the way to go. A little garlic chili sauce, a little cilantro, a splash of lemon at the end? Done.

3 tablespoons vegetable oil
1 large Dungeness crab, steamed, cleaned, and cracked
4 cloves garlic, minced
2 tablespoons garlic chili sauce (more if desired)
1/4 cup chopped cilantro
Heat oil in a large wok over high heat. Add crab and saute for a minute or two. Add garlic and saute for another two minutes, tossing frequently. Toss in garlic chili paste and stir to coat evenly.
Reduce heat to medium and cover with a lid. Cook for an additional 2-3 minutes until crab is heated through.
Transfer to a platter and sprinkle with chopped cilantro. Serve immediately.
