It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

This baked version of chicken parmesan saves you the calories (and mess!) of pan-frying
1 egg, beaten
3/4 cup dry seasoned Italian bread crumbs
4 boneless, skinless chicken breast halves
1 jar (26 ounce size) spaghetti sauce
1 cup shredded mozzarella cheese
Preheat the oven to 400 degrees F.
Place the beaten egg in a shallow dish. Place the breadcrumbs in another shallow dish.
Dip the chicken first in the egg, coating on all sides. Let any excess drip off. Next dredge the chicken in the crumbs, coating both sides thoroughly.
Place the chicken in a 9x13 baking dish. Place the dish in the oven and bake at 400 degrees F for 20 minutes.
Pour the spaghetti sauce evenly over the chicken. Sprinkle the cheese on top.
Return the pan to the oven and bake for 10 more minutes or until the chicken is cooked through and the cheese has melted.

Nice & easy for the novice cook. Personally, I prefer the 3 step breading method (flour, egg, seasoned Panko breadcrumbs) b/c the breading stays on the chicken better. I like to use my leftover homemade Marinara sauce, & top the chicken off with some shaved Parmesan-Regiano cheese & chopped Italian Parsley. Seriously delicioso!

This is exactly the way I've been making Chicken Parm for years! In addition to the Mozzarella, I also top the breasts with shredded Parmesan cheese. I also flip the chicken after about 10 minutes to get the crumbs on the bottom to finish off the same. I also use a rack in the dish or on a cookie sheet.

This dish is so easy to make, usually comes out really juicy, and can easily accomodate added ingredients (for more experienced cooks). I've cooked this for significant others and my parents and have always received rave reviews!
