ingredients
4 boneless, skinless chicken breast halves 1 large egg, lightly beaten 1/2 cup Italian breadcrumbs 2 tablespoons butter, melted 1 3/4 cup spaghetti sauce 1/2 cup shredded mozzarella cheese 1 tablespoon grated Parmesan cheese 1/4 cup chopped fresh parsley
directions
Pound the chicken to an even thickness of about 1/4-inch.
Place the beaten egg in a shallow dish. Place the breadcrumbs in another shallow dish.
Heat a skillet over medium-high heat. Add the butter, turning the pan so the butter melts and coats the pan evenly.
Dip each chicken breast into the egg, letting any excess drip off. Dredge each breast in the breadcrumbs then place the chicken in the skillet and cook, turning as needed, until browned on both sides.
Pour the spaghetti sauce evenly over the chicken in the skillet. Bring the sauce to a boil then reduce the heat, cover the pan, and let it simmer for 10 minutes.
Sprinkle the chicken with the Mozzarella and Parmesan cheese. Put the cover back on the pan and cook for 5 more minutes or until the cheese has melted and the chicken is cooked through.
Serve hot with pasta, if desired. Sprinkle with cheeses and parsley; cover and simmer 5 additional minutes or until cheeses melt.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.
Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.
