Pork Fillet With Watercress Sauce

ingredients
1 1/2 pound pork fillet
2 tablespoons olive oil
2 ounces butter
2 tablespoons Worcestershire sauce
1 medium onion, finely chopped
1 bunch watercress, chopped
1/4 pint white wine
1/4 pint chicken stock
1 lemon, juiced
1 teaspoon paprika
1/4 pint double cream
salt and pepper
directions
Preheat the oven to 180c / 350 F / gas mark 4.
Cut the pork fillet into slices, saute in a frying pan in batches, using the oil & butter. Put the sauteed pork into a casserole.
Saute the onion till soft. Add the watercress, Worcestershire stock and wine, bring to the boil, cook for a minute. Add the paprika, lemon juice and the cream, season to taste.
Pour this over the pork in the casserole. Cover and cook for 60 minutes.
