An easy and delicious way to use up leftover pork. You can also use this recipe with ham, chicken, or beef. You can also use leftover cooked rice if you have it. Use one cup in place of the 1/2 cup of uncooked instant rice and drain the tomatoes. Just heat through and serve.
1 tablespoon butter or margarine
1 cup sliced fresh mushrooms
1/3 cup chopped onion
1 clove garlic, minced
1 can (15 ounce size) diced tomatoes, undrained
1 cup cubed cooked pork
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1 pinch sugar
1/2 cup uncooked instant rice
Melt the butter in a large skillet over medium-high heat and saute the mushrooms, onion, and garlic until soft.
Stir in the tomatoes, pork, red and green bell peppers, Italian seasoning, salt, and sugar. Bring to a boil then stir in the uncooked rice.
Cover the skillet and remove from the heat. Let it stand for 5-8 minutes or until the rice has absorbed the liquid.
Stir before serving and adjust seasonings as necessary.
To make this dish heartier, add cooked beans such as kidney beans or black beans.
Try adding a splash of soy sauce or Worcestershire sauce during cooking for extra flavor.
For a cheesy twist, sprinkle grated Parmesan or cheddar cheese on top before serving.
To make this recipe vegetarian, you can omit the pork and use vegetable broth instead of meat-based broth. You can also add extra vegetables or tofu for protein.
You can use fresh tomatoes in this recipe. Just make sure to chop them up and adjust the cooking time slightly to allow them to soften. You'll also need to add liquid to the recipe for the rice since you won't have the liquid from the canned tomatoes. Add about 1/3 cup of liquid (water, tomato juice, broth, etc).
Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stove or in the microwave before serving.
You can freeze this dish in a freezer-safe container for up to 2-3 months. Make sure to thaw it in the refrigerator overnight before reheating.

This was really good. I used canned mushrooms instead of fresh because I didn't have fresh. I used leftover pork chops cut up for the pork and rotel diced tomatoes. Easy to make. My 12 year old said she'd like to make it next time.
