ingredients
4 pounds pork (ribs, chops or other)
2 teaspoons salt
3 cloves garlic, crushed
2 teaspoons whole leaf oregano
1 quart blended red chili sauce
directions
Evenly sprinkle the pork with the salt. Place the meat in a plastic zip-top bag.
Combine the garlic, oregano, and chili sauce. Pour the mixture evenly over the meat, turning the meat as needed to completely coat.
Seal the bag and place in the refrigerator overnight (6-8 hours).
The next day, add the meat to a dutch oven over medium-low heat. Alternately, the meat can be cooked in the oven at 350 degrees F. Cover the pan and cook for about an hour or until meat is tender (cooking time will vary depending on the cut/size of the pork you used).
