Chuka Soba Noodles With Shrimp

4 ounces chuka soba noodles
1 tablespoon Asian sesame oil
2 tablespoons sesame seeds
2 cups fresh bean sprouts
1/4 pound small peeled, cooked shrimp
3 green onions, thinly sliced
1 stalk celery, thinly sliced on the diagonal
1/4 pound mushrooms, thinly sliced
directions
Follow package instructions to cook noodles. In a large bowl, mix noodles with sesame oil and set aside.
In a small frying pan over medium heat, stir sesame seeds until lightly browned (4 to 6 minutes), then set aside to cool.
To a large pot of boiling water, add bean sprouts. When it returns to a boil, remove from heat, drain, rinse with cold water and drain again. Add sprouts to noodles, cover and cool in refrigerator for at least 1 hour.
To serve, lightly combine noodle mixture, sesame seeds, shrimp, onions, celery and mushrooms. Toss with desired dressing.
