ingredients

24 extra large raw shrimp, peeled
2 large jalapeno peppers, seeded
12 ounces Monterey Jack cheese
12 slices bacon

directions

Preheat a grill.

Cut the jalapenos and cheese into thin, equal-sized pieces. Slice the bacon into thirds.

Slice the underside of the shrimp down the middle, cutting almost but not all the way through. Insert a slice of cheese and a slice of pepper into the cut portion of the shrimp. Fold the shrimp back together and wrap it in a piece of bacon. Secure the shrimp and bacon with a toothpick.

Place the wrapped shrimp on the grill and cook, turning as needed, until the shrimp are cooked and the bacon is browned (5-7 minutes).

Remove from the grill and serve hot.

recipe tips

Soak the toothpicks in water before using them to prevent them from burning on the grill.

For extra flavor, marinate the shrimp in a mixture of olive oil, garlic, and herbs before stuffing and wrapping.

Try adding different fillings like a small slice of pineapple or a dollop of cream cheese for variety.

Make sure the grill is well-oiled or use a grill basket to prevent sticking.

Experiment with different seasonings and rubs on the shrimp before grilling for added flavor.

common recipe questions

What type of shrimp should I use for this recipe?

Extra large shrimp are best for this recipe, as they provide a good base for stuffing and wrapping with bacon. Smaller shrimp can be used but they are a little harder to stuff.

Can I use a different type of cheese?

You can substitute Monterey Jack cheese with another type of melting cheese like cheddar, pepper jack, or mozzarella.

Do I have to use jalapeno peppers?

No, if you prefer less spicy flavor, you can substitute the jalapeno peppers with milder options like bell peppers or even omit them altogether.

How do I prevent the bacon from unraveling?

Make sure to secure the bacon-wrapped shrimp with a toothpick to keep everything in place while grilling.

Can I bake these instead of grilling?

You can bake the bacon-wrapped shrimp in a preheated oven at 400 degrees F for about 15-20 minutes or until the shrimp are cooked through and the bacon is crispy.

How do I know when the shrimp are done?

The shrimp are cooked when they turn opaque and pink, with a firm texture. Make sure not to overcook them to keep them tender.

Can I prepare these ahead of time?

You can assemble the shrimp ahead of time and keep them covered in the refrigerator until ready to grill. Make sure to bring them to room temperature before grilling.

Can I use a different type of meat to wrap the shrimp?

You can experiment with different types of bacon or even thinly sliced prosciutto for a different flavor.

How do I store leftovers?

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer.

tools needed

Sharp Knife: For cutting the jalapenos and cheese into thin, equal-sized pieces and slicing the bacon into thirds.

Grill: For cooking the bacon-wrapped shrimp over an open flame, giving them that delicious smoky flavor.

Toothpicks: Used to secure the wrapped shrimp and bacon together before grilling.

Cutting Board: A stable surface for chopping the jalapenos and cheese and slicing the bacon.

Tongs: Handy for turning the shrimp on the grill to provide even cooking and prevent them from falling apart.

what goes with it?

French Fries: Because let's be real, everything is better with fries. The crispy texture and salty flavor of the fries will perfectly complement the cheesy, savory goodness of the bacon-wrapped grilled shrimp. Think of it as a fancy shrimp and fries combo - move over, fish and chips!

Mango Salsa: Give these bacon-wrapped shrimp a fruity kick with a side of fresh mango salsa. The sweet and tangy flavors of the salsa will contrast beautifully with the smoky bacon and spicy cheese.

Caesar Salad: Balance out the richness of the bacon and cheese with a crisp and refreshing Caesar salad. The crunchy romaine lettuce, creamy dressing, and Parmesan cheese will provide a nice contrast to the intense flavors of the shrimp poppers.

Garlic Aioli: Dip these bacon-wrapped grilled shrimp in a creamy garlic aioli for an extra burst of flavor.

Grilled Pineapple Rings: the sweetness of the grilled pineapple will complement the savory bacon and spicy cheese, creating a tropical vacation vibe.

beverage pairings

Wine Pairings
Chardonnay: A buttery Chardonnay will add a touch of elegance to these bacon wrapped grilled shrimp poppers. The creamy texture and hints of oak will complement the spiciness of the cheese and jalapenos.

Sauvignon Blanc: Opt for a crisp Sauvignon Blanc if you prefer a white wine. The bright acidity and zesty flavors will cut through the richness of the bacon and cheese.

Syrah: Looking for a red wine option? A bold Syrah with its dark fruit flavors and peppery notes can stand up to the smoky bacon and spicy jalapenos in these grilled shrimp poppers.

Other Alcohol Pairings
IPA: The hoppy bitterness of an IPA can balance the richness of the bacon while the citrusy and piney notes can complement the spice of the jalapenos.

Margarita: Go for a classic margarita with these poppers for a fun and lively pairing. The acidity of the lime juice will cut through the fatty bacon, while the tequila adds a touch of complexity to the spicy cheese.

Spicy Michelada: If you're feeling adventurous, a spicy Michelada can be a fantastic match. The beer-based cocktail with its mix of tomato juice, hot sauce, and spices can enhance the flavors of the grilled shrimp poppers with every sip.

Non-Alcoholic Pairings
Iced Horchata: Cool down the heat of the jalapenos with a creamy, cinnamon-infused horchata. The sweet and nutty flavors will complement the spicy cheese while offering a refreshing contrast to the bacon.

Pineapple Juice: The tropical sweetness of pineapple juice can add a fruity twist to these bacon wrapped grilled shrimp poppers.

Ginger Beer: A non-alcoholic ginger beer with its spicy kick and carbonation can echo the flavors of the jalapenos and cheese while providing a refreshing fizz to each bite.

Wonderful dish! Had adjusted quantity to meet our family requirements, use caution on this. We ended up with way too much Jack cheese.

A new favorite! A mere handful of ingredients, almost zero prep time, and tastes great, what more could you want?
