Zucchini With Shrimp

Stir-fry doesn't need to be heavy or greasy. Vegetables like zucchini and asparagus keep this shrimp dish light yet satisfying, while subtle additions of sesame oil and cilantro really kick up the flavor.

8 ounces fresh or frozen peeled and deveined medium shrimp
5 medium zucchini
8 ounces fresh asparagus
2 tablespoons cooking oil
1 fresh jalapeno pepper, seeded and finely chopped
1 tablespoon grated fresh ginger
2 cloves garlic, minced
2 tablespoons snipped fresh cilantro
1 tablespoon sesame seeds, toasted
2 teaspoons toasted sesame oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper

directions

Thaw shrimp, if frozen. Rinse shrimp; pat dry with paper towels. Set aside. Halve each zucchini lengthwise. Place each zucchini half, cut side down, on a cutting board and cut into long, thin strips. Set aside. Snap off and discard woody bases from asparagus. Cut asparagus diagonally into 1-inch-long pieces.

Place asparagus in a steamer basket over gently boiling water. Cover and steam for 2 minutes. Add zucchini; steam for 1 to 3 minutes more or just until vegetables are crisp-tender (do not overcook). Drain well; cover and keep warm.

Meanwhile, in a large skillet, heat cooking oil over medium-high heat. Add jalapeno pepper, ginger, and garlic; cook for 30 seconds. Add shrimp. Cook and stir for 2 to 3 minutes more or until shrimp are opaque.

Stir cilantro, sesame seeds, sesame oil, salt, and black pepper into shrimp mixture. Add steamed asparagus and zucchini; toss gently to coat. Transfer to a serving platter.

    This was very tasty, perfect for a hot summer day. It was light but satisfying. My hubby really liked this, but ask if I could try adding some pepper flakes next time for another type of heat beside the jalapeno.

    My hubby loved this. It was perfect for a hot summer day when you don't want something heavy. This was light but satisfying. He did ask me to add a little more heat, like some pepper flakes next time. The jalapeno was tasty but needed a different type of heat.
