Tequila Lime Shrimp

ingredients
2 pounds medium to jumbo shrimp, peeled and deveined
2 tablespoons garlic, minced
1 tablespoon ginger, minced
1/2 lime, juiced
2 ounces tequila
2 tablespoons peanut oil
directions
Drizzle peanut oil onto a hot stainless steel grill or wok. Immediately add garlic and ginger and cook until slightly browned. Add shrimp. Cook until halfway done (about 1 to 1 1/2 minutes), stirring the whole time.
Add lime and tequila and cook, continually stirring, for 1 to 2 more minutes until shrimp is pink and tender.
Serve right away over rice or just by themselves.

Great leftover chilled over salad. For an added flavor, add sesame seeds during cooking right after the tequila and lime. The sauce really blends well with the seeds.
