A creamy and flavorful shrimp dish served over rice.
1 can (10 ounce size) cream of shrimp soup
3/4 cup evaporated milk
2 tablespoons dry sherry
1 1/2 cup small shrimp, peeled, deveined, and cooked
4 ounces canned sliced mushrooms, drained
2 egg yolks, beaten
Grease the inside of the crock pot.
Combine the cream of shrimp soup, evaporated milk, and sherry in a bowl. Mix until smooth.
Stir in the shrimp and mushrooms. Transfer the shrimp mixture to the crock pot.
Cover the crock pot and cook on low heat for 1-2 hours. Stir the egg yolks into the mixture. Cook, covered, for another 30-45 minutes, or until the sauce has thickened.
Serve the shrimp newburg over rice or pasta.
To make the dish more visually appealing, reserve a few whole (cooked) shrimp to garnish the top before serving.
Try serving the shrimp newburg over creamy polenta or mashed potatoes.
Use a crock pot liner for easy cleanup after cooking.
Experiment with adding different herbs or spices like paprika, garlic, or thyme for added flavor.
For a touch of heat, sprinkle crushed red pepper flakes or cayenne pepper over the finished dish.
For a lighter version, you can use low-fat evaporated milk and low-fat soup.
Top the dish with a sprinkle of grated Parmesan cheese for a savory finish.
Cream of shrimp soup is a creamy soup made with shrimp stock and cream, giving it a rich, seafood flavor.
Yes, raw shrimp can be used, but they will need to be peeled and deveined, and cooked longer. Add an extra hour to the cooking time.
Dry white wine or chicken broth can be substituted for dry sherry in this recipe for a similar flavor.
The sauce will be thick enough when it coats the back of a spoon and holds a line drawn through it without immediately filling in.
Yes, feel free to add in other vegetables like cooked green beans, peas, or onions.
Egg yolks are added to the shrimp newburg to thicken the sauce and give it a rich, creamy texture.
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
While possible, freezing may change the texture of the sauce. If freezing, store in airtight containers and thaw in the refrigerator before reheating.
Gently reheat the shrimp newburg on the stove over low heat, stirring constantly to prevent the sauce from breaking.
Crock Pot: For slow cooking the shrimp dish and allowing the flavors to meld together while you go about your day.
Bowl: For combining the cream of shrimp soup, evaporated milk, and sherry to create the base for the dish.
Spatula or Spoon: Use this tool to stir the creamy sauce before transferring it to the crock pot.
Whisk or Fork: For beating the egg yolks until they are smooth and combined, adding a velvety richness to the shrimp newburg.
Parmesan Crusted Asparagus: the cheesy texture will provide a perfect contrast to the creamy shrimp.
Garlic Bread: this classic Italian side will soak up every last drop of the rich and creamy sauce from the shrimp newburg. It's like a delicious flavor sponge for your plate.

Sauteed Spinach with Garlic: The earthy flavors of spinach pair beautifully with the seafood and mushrooms in the shrimp newburg. Plus, garlic makes everything better - even vegetables.
Wine Pairings
Chardonnay: The buttery notes in Chardonnay will complement the creamy richness of the shrimp newburg. Look for one with a touch of oak to enhance the flavors and add a bit of depth to the dish.
Sauvignon Blanc: If you prefer a white wine with a bit more acidity, a Sauvignon Blanc is a great choice. Its zesty citrus flavors can cut through the richness of the sauce.
Pinot Grigio: For a lighter option, a Pinot Grigio with its crisp and fruity character can balance out the creamy texture of the dish without overpowering the delicate shrimp flavors.
Other Alcohol Pairings
Dry Vermouth: A dry Vermouth will add a touch of complexity to the dish with its herbal and slightly bitter notes. It can enhance the savory elements of the shrimp newburg and provide a nice contrast to the creamy sauce.
Moscow Mule: The spiciness of the ginger beer paired with the lime and vodka in a Moscow Mule can cut through the richness of the dish. Plus, the refreshing flavors can be a nice contrast to the creamy shrimp.
Scotch: If you're feeling a bit more daring, a smooth Scotch can be a delightful pairing for the shrimp newburg. The smoky and peaty notes can add a layer of complexity to your meal.
Non-Alcoholic Pairings
Coconut Water: It's a tropical twist that can balance out the richness of the sauce.
Iced Chai Latte: The warm spices in an iced chai latte can complement the flavors in the shrimp newburg. The creamy texture of the latte can also mimic the richness of the dish, creating a nice pairing.
Citrus-infused Water: Infusing your water with slices of lemon, lime, or orange can add freshness to each sip.

I'm a little confused as to why you would need to cook this in a crockpot for 4-5 hours when all of the ingredients listed (with the exception of the egg yolks) are already cooked.
You probably don't need to cook it that long as far as heating it, but the flavors will meld better if you do.

Cream of shrimp soup not available in Canada so used cream of mushroom. Also added two minced cloves of garlic. A really good recipe! Will use it again. Also very low fat so not bad if you're watching calories!
