Herbed Shrimp in Garlic Butter

ingredients
Shrimp
1 1/4 pound extra-large or large shrimp, peeled and deveined
1 tablespoon salt
1 teaspoon thyme
1 teaspoon crumbled oregano
1/4 teaspoon black pepper
1 pinch cayenne pepper or to taste
Garlic Butter
1/2 cup butter, at room temperature
4 cloves garlic, minced or pressed
1 1/2 tablespoon minced fresh parsley
Mushrooms
3 tablespoons butter
2 cups sliced fresh mushrooms
pasta or wild rice, cooked
directions
In a medium bowl, toss shrimp with salt, thyme, oregano, black pepper and cayenne. Cover and refrigerate for about 30 minutes.
Butter an 8- x 11-inch (approximately 2-quart baking dish). Preheat the oven to 375 degrees F.
Make Garlic Butter by whisking butter, garlic and parsley together in a small bowl until well blended. Set aside.
Saute mushrooms in butter for about 3 minutes or until just cooked. Set aside.
Layer shrimp on bottom of dish. Top with sauteed mushrooms. Dot with small spoonfuls of Garlic Butter over the top.
Bake in preheated 375 degrees F oven for 12-15 minutes or until shrimp are pink and cooked through.
Serve over cooked pasta or wild rice.
