Barley And Shrimp Dinner Recipe

Ingredients:
2 teaspoons Olive Oil -- See Note
2/3 cup Pearl Barley
1 clove Garlic -- Minced
1/4 teaspoon Ground Turmeric
2 tablespoons Chopped Parsley
1 1/2 cup Cherry Tomatoes -- Cut In Halves
1 1/2 cup Bottled Clam Juice Or Chicken Broth
1/2 cup Dry White Wine
6 ounces Shrimp Or Scallops
1/2 cup Fresh Green Peas
Directions:
NOTE: You can use extra chicken broth if you want to remove this fat.
Heat oil in a skillet over med heat. Add barley, garlic and turmeric. Cook, stirring, until barley is golden, about 3 minutes.
Stir in parsley, cherry tomatoes, clam juice and wine. Bring to boil. Reduce heat, cover and simmer 40 minutes.
Arrange seafood and peas over the barley. Cover and cook for 5 - 10 minutes or until barley is tender.
