Bacon Wrapped Shrimp With Rosemary And Blue Cheese

ingredients
24 large shrimp, peeled and deveined
salt
black pepper
1/4 cup balsamic vinegar
12 slices bacon, halved crosswise
oil
blue cheese, crumbled in small pieces
1 tablespoon fresh rosemary, chopped
directions
Place shrimp in a bowl and season with salt, pepper and balsamic vinegar. Refrigerate for 2 hours.
Heat water in a skillet until simmering. Add bacon (in batches if needed) and cook until almost done. Drain well on paper towels.
Remove shrimp from refrigerator and wrap each shrimp with bacon. Secure with a toothpick. Cover shrimp and refrigerate until ready to use.
Heat oil in a skillet and fry wrapped shrimp for 2 or 3 minutes approximately, or until cooked. Be careful not to overcook. Drain on paper towel briefly.
Place hot shrimp on individual plates or a serving platter. Top with blue cheese and chopped rosemary while hot.
Serve immediately.
