ingredients

3/4 pound sole fillets (lemon or gray sole)
1 pinch minced fresh rosemary
3 tablespoons white wine
1 tablespoon fresh lemon juice
2 scallions, sliced
1/4 pound mushrooms, stems removed, sliced
1 tablespoon chopped fresh parsley
salt and freshly ground black pepper

directions

Preheat the oven to 350 degrees F. Grease a baking dish large enough to hold the fish in a single layer.

Place the fish in the baking dish. In a small bowl or measuring cup, combine the rosemary, wine, and lemon juice. Evenly drizzle over the fish.

In a skillet over medium heat, saute the scallions and mushrooms in a little bit of oil until the mushrooms are just softening. Evenly spoon the mushroom mixture over the fish.

Cover the baking dish tightly with foil. Place in the oven and bake at 350 degrees for 15 minutes or until the fish flakes easily with a fork.

Season the fish with salt and pepper and garnish with the chopped parsley. Serve hot.

    A little too lemony. Next time, I would probably use half the amount listed above. But it's a nice, quick recipe. And it's good for those who are dieting too.

    Too much lemon but still good. I'd use all wine next time as the lemon I found distracting

    Tilapia better than sole? I think not. I think of Tilapia as a junk fish that may be available but it is farmed and tasteless.

    I tried it with the Sole and it wasn't very good.. I think Tilapia would be a better choice.. Also try searing Tilapia in butter on a medium high heat in a searing pan, (with a bit of salt and pepper).. then once seared and browned turn the heat down and add some homemade plum sauce and simmer for a few minutes... Delicious..

    I couldn't find sole so I used tilapia which seems to be the easiest fish to find these days. I thought this was a delightful way to cook fish. It was very tender and flavorful. Not fishy at all. I will definitely make this again, and I think it would be good to serve to guests who like fish.
