2 tablespoons olive oil
2 sole fillets, about 6 ounce each
1 large tomato, seeded and chopped
1 tablespoon garlic, minced
1 tablespoon fresh parsley, chopped
Preheat oven to 400 degrees F. Brush a shallow baking dish with some olive oil.
Place fillets in dish and season with salt and pepper to taste. Combine remaining olive oil with tomato and garlic in a bowl. Spoon over fillets.
Bake about 15 minutes, or until cooked through. Serve fish sprinkled with parsley.

The simple seasoning of garlic, parsley, salt and pepper brought out the delicious flavor of the fish. The cherry tomatoes added not only color but a nice contrast in texture and flavor. The recipe was done in about 15 minutes from start to finish!
