Fish Steamed In Beer

ingredients
1 mild white fish (2 pound size)
3 scallions, trimmed
3 sprigs fresh cilantro
1 piece (2-inch size) ginger, sliced
32 ounces beer
dill weed
directions
Using the flat side of a knife blade, crush white parts of trimmed scallions.
Rinse fish and pat dry, then stuff cavity with crushed scallions, cilantro, and ginger. Bend fish's tail towards its head so that it fits plate.
Pour 24 ounces beer into a wok fitted with a rack. Place the plate with fish on the rack and pour another 8 ounces beer over fish. Cover and steam over high heat until fish flakes easily, 20-30 minutes.
Serve with fresh cilantro and dill, either raw or briefly wilted.
