1-2 hrs
ingredients
1 1/2 pound fish fillets such as cod, flounder, mahi mahi, or halibut
salt and pepper, to taste
1 medium onion, coarsely chopped
5 tablespoons chopped fresh parsley
2 teaspoons grated lemon rind
2 teaspoons grated orange rind
4 teaspoons olive oil
orange and lemon slices, for garnish
directions
Grease the bottom of the crock pot. Season the fish fillets with salt and pepper as desired. Place the fish in the bottom of the crock pot.
Top the fish with the onion. Sprinkle the parsley, lemon zest, and orange zest over the top. Drizzle everything with the oil.
Cover the crock pot and cook the citrus fish on low heat for 1 1/2 hours or until it flakes easily with a fork. The cook time will depend on the thickness of the fish fillets.
Remove the fish from the crock pot and garnish with orange and lemon slices, if desired.
