3 pounds beef chuck roast, trimmed of fat

1 cup sliced celery
2 cans (10 ounce size) condensed chicken gumbo soup
1/3 cup bourbon
Place the roast in the crock pot and season with salt and pepper. Sprinkle the celery around the roast. Pour the soup and bourbon over the top of the roast.
Cover the crock pot and cook on low for 4-6 hours or on high for 2-3 hours or until the roast is tender.
