Seriously, this works! A roast, soup mix, and a can of coke are all you need for a moist and flavorful oven-roasted masterpiece.
3 1/2 pounds beef roast (sirloin tip, round, or boneless chuck)
1 envelope dry onion soup mix
1 can (12 ounce size) coca-cola
Preheat the oven to 300 degrees F.
Place the roast in a baking dish. Sprinkle the onion soup evenly over the meat. Slowly pour the cola over the top.
Cover the pan tightly with aluminum foil. Place the roast in the oven and bake at 300 degrees F for 3-4 hours or until tender.
If you prefer a less sweet outcome, use beef broth in place of some of the cola to balance the sweetness while still benefiting from the tenderizing effect of the soda.
For an extra flavorful roast, rub the beef with a mixture of your favorite dried herbs and spices before adding the onion soup mix and cola.
Allow the roast to rest for 10-15 minutes after removing it from the oven before slicing. This allows the juices to redistribute throughout the meat, making sure it's moist and flavorful when served.
Yes, you can use other types of soda for this recipe. Dark sodas like root beer or Dr. Pepper are good alternatives and will impart their own unique flavors to the roast. It is not advisable to use diet soda as that can end up leaving a bitter flavor due to the artificial sweetners.
Coca-Cola roast beef can be sliced and served with its juices as a gravy, accompanied by mashed potatoes, roasted vegetables, or a green salad. It's also delicious shredded and used in sandwiches or tacos.
To thicken the juices for a gravy, remove the roast from the pan after cooking. Mix a tablespoon of cornstarch with a little cold water to form a slurry. Place the pan over medium heat, stir in the slurry, and cook until the juices thicken into a gravy.
Yes, adding vegetables like carrots, potatoes, and onions around the roast before baking creates a complete meal in one pan. The vegetables will absorb the flavors from the meat and cola, becoming tender and flavorful.
It's not necessary to sear the beef for this recipe, as the slow cooking in the cola mixture will make sure the meat is tender and flavorful. However, searing the meat before baking can add a rich flavor and texture to the outside of the roast.
Leftover Coca-Cola roast beef should be stored in an airtight container in the refrigerator and consumed within 3-4 days. The meat can also be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat slowly in the oven or microwave.
Yes, this recipe can easily be adapted for a slow cooker. Place the roast in the slow cooker, sprinkle with onion soup mix, pour the cola over, and cook on low for 5-6 hours or on high for 3-4 hours, or until tender.
Yes, you can adjust the recipe for different sizes of beef roasts. Just make sure that you adjust the cooking time accordingly. A general rule of thumb is to cook the roast for about 45-60 minutes per pound at 300 degrees F, or until tender.
Yes, add the roast, soup mix, and cola to the instant pot. Lock the lid and cook the roast for 1 hour 20 minutes. Let the pressure release naturally for 15 minutes then use manual release.
Coca-Cola in roast beef acts as a tenderizer and flavor enhancer. The acidity and sugars in the cola help to break down the meat fibers, resulting in a tender roast. Additionally, the caramel notes of the cola add a unique sweetness and depth of flavor to the beef.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

I have been making this roast for years. It always turns out great. My husband was looking at my very worn recipe print out from this site and asked if I'd ever left a review about how good it was and I realized I hadn't. So here it is - delicious and fool proof recipe! We'd give it 10 stars if that was an option. You can also do this in the crock pot, just cook it for about 10 hours on low.

Add a can of ceam of mushroom soup with the onion soup mix and it's even better, trust me! Makes incredible gravy. Always a family & friend favorite and the prep time is 5 minutes.
