4 cups rice flour, finely ground
1 1/2 cup potato starch flour
2/3 cup tapioca starch
1 teaspoon xanthan gum, optional


Mix the rice flour, potato starch, tapioca starch and xanthan gum if using.

Use in recipes in place of flour for flour/gluten free bread.
