Tofu Chocolate Mousse

ingredients
12 ounces soft tofu
1 small sugar free jello instant pudding mix
1 tablespoon cocoa powder, heaping
8 ounces whipping cream
1 teaspoon vanilla extract
directions
Mix together tofu and pudding. Add cocoa. Mix in separate bowl till stiff whipping cream then add vanilla
Finally mix the whipping cream and the tofu/pudding mixture together in mixer. DO NOT OVER WHIP OR YOU WILL HAVE CHOCOLATE BUTTER.
Put in individual serving dishes.

I make this periodically and love it. I wonder if you can change it up with different flavored sugar free puddings and extracts. Butterscotch sounds good.

this dessert is wonderful - restaurant quality! I agree with the previous poster - the carb count is actually higher with about 36 net carbs for the whole batch.

This recipe is delicious, but I calculated the nutritional information for all the ingredients, based on the package labels and amounts used, and came out way different. Here are the numbers for the entire recipe; you can divide by the number of servings you make it into to determine the numbers per serving: 1310 calories, 107 grams fat, 56 saturated fat, 240 cholesterol, 1160 sodium, 40 carbohydrates, 4 fiber, 0 sugar, 29 protein, 137% vitamin A, 6% vitamin C, 40% calcium, 22% iron.

My teenagers wrinkled up their nose because it has tofu in it. Then proceeded to devour the entire batch as soon as it was made. Topped it with a squirt of lite whipped cream and some toasted almonds. I had to make another batch for hubby and me. Try it!
