I used the whole 15oz. of Ricotta that it came in, to which I added 5 Splendas, and 1 1/4 tsp almond extract. It was great!

Quick to prepare, easy to clean up and delicious to eat, this recipe is a satisfying alternative to pudding or ice cream, and provides some protein to boot. It's also great as part of a light meal. Make this any time you feel the need for a guilt-free indulgence. To add some decadence, serve it in a pretty wine glass (I always do) with or without a sprig of mint and some chocolate shavings. Some ricotta's have a grit to them, keep trying brands until you find a smooth one. Great recipe, almond is the best flavor we have tried hands down.

I love this recipe. I can eat it for breakfast or for dessert. Very helpful for those late night ice cream folks. ;-)
