1 teaspoon slivered toasted almonds

directions

Mix together the ricotta, almond extract, and sugar substitute in a dessert bowl. Serve chilled and sprinkled with toasted almonds.

    I used the whole 15oz. of Ricotta that it came in, to which I added 5 Splendas, and 1 1/4 tsp almond extract. It was great!

    Quick to prepare, easy to clean up and delicious to eat, this recipe is a satisfying alternative to pudding or ice cream, and provides some protein to boot. It's also great as part of a light meal. Make this any time you feel the need for a guilt-free indulgence. To add some decadence, serve it in a pretty wine glass (I always do) with or without a sprig of mint and some chocolate shavings. Try other flavors: replace the almond extract with vanilla, pineapple, lemon, or any of the many available extract flavorings available today. Bon appetito!

    Some ricotta's have a grit to them, keep trying brands until you find a smooth one. Great recipe, almond is the best flavor we have tried hands down.
