Sundried Tomato Chicken Sausage Bruschetta

ingredients
1 package chicken sausage, sliced into small pieces
1 pound mushroom, chopped
1/2 cup shallots, finely chopped
1 teaspoon balsamic vinegar
1/4 cup fresh chopped parsley
1 cup sun-dried tomatoes
3/4 cup Parmesan cheese, grated
1 loaf of Italian or French bread
directions
In a non-stick pan with cooking spray cook mushrooms, shallots, and sausage pieces stirring occasionally for 5 minutes until sausage is lightly browned, and mushrooms are tender.
In a medium bowl, add mushroom and sausage mixture, balsamic vinegar, parsley, sundried tomatoes and salt and pepper to taste.
Toast bread and top with mushroom mixture. Serve warm.

Five stars all the way! We used turkey sausage and this was delicious! The recipe doesn't specify, but you will want to slice the bread in 1/2-3/4" slices, then toast until golden. The bread should be fairly well toasted so the topping doesn't make it soggy if it sits for too long (but these are so good they won't sit around if there are people nearby!)
