Grilled Pepper Bruschetta With Mozzarella Cheese

ingredients
2 cups red, green or orange bell peppers, grilled, peeled and sliced
3 tablespoons fresh basil, finely chopped
1 tablespoon balsamic vinegar
8 slices country-style bread, grilled
salt and pepper, to taste
1 clove garlic, peeled and sliced in half
1 cup shredded mozzarella cheese
3 teaspoons olive oil
directions
In a medium bowl, combine roasted peppers, salt, black pepper, basil and vinegar.
Rub garlic on both sides of grilled bread slices. Place bread slices on a baking sheet and top with roasted peppers. Sprinkle shredded mozzarella over roasted pepper topping. Drizzle with olive oil.
Broil until cheese begins to brown. Serve hot.
