ingredients
2 cups grated raw summer squash
1/2 cup finely chopped onion
2 teaspoons sugar
1/2 teaspoon salt
black pepper, to taste
6 tablespoons flour
2 eggs, beaten
2 tablespoons melted butter
directions
Combine squash, onion, sugar, salt and pepper, and flour. Stir eggs into squash mixture. Add melted butter.
Drop fritter batter by tablespoons onto greased griddle or skillet. Cook until brown, then turn and brown on other side.

These were exactly what I was looking for. The squash is the primary ingredient and not tons of corn meal, or bread crumbs etc. I did add an extra Tablespoon of flour to give them a little more form, but otherwise I left it alone. I'll hang onto this one.
