ingredients
3/4 cup cherries, pitted and drained
2 tablespoons sugar
1 tablespoon brandy, kirsch, or rum
1 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
1 egg, beaten
1 tablespoon butter, melted
1/2 cup milk, approximately
hot oil for frying
directions
Mix cherries, sugar and liquor.
Combine flour, salt and baking powder; stir in egg, milk and butter. Stir cherries into dough (more milk may be added if too thick).
Drop by spoonfuls into hot oil. Fry until brown, turning fritters as they rise to the top. Drain on paper towels, sprinkle with powdered sugar.
Serve with cherry sauce that has been flavored with the same liquor as fritters.
