- #34497

ingredients
1 box (18 ounce size) yellow cake mix
4 eggs
1 box (large size) vanilla instant pudding mix
6 teaspoons amaretto
1/2 cup water
1/2 cup vegetable oil
1/4 teaspoon almond extract
Amaretto Icing
1/2 cup amaretto
1 cup sifted powdered sugar
directions
Heat oven to 350 degrees F. Grease and flour a 9 or 10" bundt pan.
Combine cake mix, eggs, dry pudding, water, oil, almond extract and the amaretto and blend together well. Pour batter into the prepared pan. Bake for 40-45 minutes.
Remove cake from oven. Let cool for 10 minutes before removing from pan. While it is still warm, poke holes in the bottom and pour the Amaretto Icing into the holes and over the bottom of the cake. Let the cake cool for at least 2 hours before serving.
For Icing: Sift powdered sugar and combine it with the amaretto. Blend until smooth. You can add more amaretto as needed for consistency.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

You must be 21 or older for this cake... The Cake alone would have probably been enough but I tried it with the Amaretto Icing and WOW! was it ever Strong! Definitely not a cake to share with the kids! The icing comes out clear and doesn't ice the cake but definitely soaks into the cake. Again, it was good but you do need to be 21 to enjoy!!
