ingredients

1 1/2 cup chopped almonds, toasted and divided
1 box (18.25 ounce size) yellow cake mix, without pudding
1 box (4 serving size) vanilla instant pudding mix
4 eggs, beaten
1/2 cup vegetable oil
1/2 cup water
1/2 cup Amaretto liqueur
1 teaspoon almond extract

GLAZE

1/2 cup sugar
1/4 cup water
2 tablespoons butter
1/4 cup amaretto
1/2 teaspoon almond extract

directions

Heat oven to 325 degrees F. Grease and flour a 10" tube or Bundt pan; sprinkle 1 cup almonds over the bottom and set aside.

In mixing bowl, combine cake mix, pudding mix, eggs, oil, water, Amaretto and almond extract. Beat on low speed with electric mixer about 30 seconds until dry ingredients are moistened. Increase speed to medium and beat 4 minutes. Stir in remaining 1/2 cup almonds.

Pour batter into prepared pan and bake 1 hour. Cool cake 10-15 minutes before removing from pan. Cool completely and place on cake plate.

For glaze, in small saucepan, combine sugar, water and butter and bring to a boil. Reduce heat to medium and gently boil 4-5 minutes, stirring occasionally, until sugar dissolves. Remove from heat and cool 15 minutes. Stir in amaretto and almond extract.

Punch holes in cake from top to bottom with wooden pick or handle of wooden spoon. Slowly spoon glaze over cake until entirely absorbed.

  1. Mmcbe REVIEW:

I needed something to impress the inlaws in a pinch. I came by this accidentally and tried it. Not only did the 'rents LOVE LOVE it, but we actually made it together. It was so much fun. Also, I didn't have a bundt pan, but a 13x9 works fine. It's a heavy cake so the middle of it starts to sink downwards. (no biggie) Also, it's SOO much better the day to 2 days AFTER!!!! BEST EVER!

  2. HATLEY7 REVIEW:

I baked this cake and decided that the next time I bake it, I will not toast my almonds prior to placing in my bundt pan. I made a double batch and did not toast the almonds for the second cake and it turned out beautiful.
