3 1/2 cups stuffing mix
8 thick pork chops
salt and pepper
Prepare the stuffing mix as directed on the package. Preheat the oven to 350 degrees F.
Cut a pocket into each pork chop, being careful not to cut all the way through.
Fill each pocket with some of the stuffing. Do not pack it too full. Secure the edges of the pocket with toothpicks if needed.
Place the stuffed pork chops in a shallow baking dish and sprinkle with salt and pepper.
Cover the pan with aluminum foil and bake at 350 degrees F for 1 hour. Remove the foil and bake for 20-30 more minutes or until the pork is cooked through. Baking time will depend on the thickness of the chops. Check for doneness with a meat thermometer.

I honestly didn't expect to love this as much as I did. In fact, this was pretty outstanding! Incredibly easy too, which was a plus. The pork was very tender and using packaged stuffing gave it a lot of flavor (since it's highly seasoned).
some times you want something fast and easy with out the apples and apricot recipes....thank you very much!
