Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

These are no ordinary chops. With a delectable stuffing made with rice and raisins and a sweet balsamic apple sauce poured over top, these pork chops welcome the autumn with open arms.
1 1/4 cup rice, cooked
1/3 cup raisins
1/4 cup chopped apple
1 dash black pepper
4 center cut pork chops, 1 1/2" thick
salt
black pepper
1 tablespoon olive oil
Sauce
1/4 cup dry white wine or chicken broth
1/4 cup cold unsalted butter, cut in chunks
1 1/2 teaspoon balsamic vinegar
1 teaspoon sugar
1/4 cup chopped apples
In a bowl, combine rice, raisins, apple and a dash pepper.
Using a sharp knife, cut a pocket in each pork chop by making a 2-inch-long slit in the fat side of chop. Work knife inside, cutting almost to the bone, but keeping the original slit small.
Using a spoon, carefully push about 1/3 cup of the stuffing into each pocket. To keep the stuffing in the pockets, insert 1 or 2 wooden toothpicks diagonally into each chop near the pocket opening. Season chops on both sides with some salt and pepper.
In a large skillet, cook chops in hot olive oil until golden brown, turning once.
Arrange chops in a 13 x 9 x 2-inch baking dish. Bake, uncovered, in a 350 degrees F oven for 45 to 50 minutes or until no pink remains, juices run clear and thermometer inserted in the stuffing registers 160 degrees F. Remove from oven and keep warm.
In small saucepan, heat wine over medium-high heat until boiling.
Boil gently 3 to 5 minutes or until reduced by half. Reduce heat to medium. Whisk in butter chunks, one at a time. Don't boil. Remove from heat. Stir in vinegar, sugar and apple. Serve over chops.

Delicious recipe. The stuffing was very flavorful and impressive. Very fall like flavors to it. I didn't expect to love the sauce since it sounded sweet but I think the balsamic vinegar cut the sweetness a bit because it was really good. The pork was very tender.

My husband and I love this recipe. We used all the sauce for just 2 of us. If I were cooking for four I would double the recipe.

This was soo delicious... My husband and I really enjoyed this meal. The only thing we changed was that we added some cinnamon to it. I also used extra apple. It tasted great and was supper moist.
