1 pound ground veal
1/4 cup bread crumbs
1 egg, beaten
1/2 cup grated Parmesan cheese
1 tablespoon minced fresh parsley
1 teaspoon salt
freshly ground black pepper, to taste
Combine the veal, bread crumbs, egg, Parmesan, parsley, salt, and pepper in a bowl. Mix well. Form the meat into 1-inch balls and refrigerate for 2-4 hours.
Heat oil in a skillet over medium heat and brown the meatballs, turning as needed, until browned and cooked through. Alternately, you can bake these at 375 degrees F for 15-20 minutes or until cooked through.
