2 pounds ground beef
1 1/2 cup soft bread crumbs
1/2 cup milk
1/4 cup dried onions
2 eggs, beaten
1 1/2 teaspoon seasoned or regular salt
Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil.
Combine the ground beef, bread crumbs, milk, onion, eggs, and salt in a bowl. Mix well.
Form the meat into 1-inch balls and place on the baking sheet. Place the baking sheet in the oven and bake at 375 degrees F for 25-30 minutes or until browned and cooked through.
Let the meatballs cool (you can transfer them to a wire rack if there is a lot of grease on the baking sheet) then divide them between freezer-safe containers. Store in the freezer for up to 3 months. Let thaw before adding to your favorite recipes.

I ended up with 5 extra lbs of ground beef. Since we buy a lot of frozen meatballs I decided to try this recipe with my excess. Worked great! I made several different flavors, about a pound of beef each. Added nutmeg to one, cajun to another, chopped cooked bacon in another, 1 plain, and Italian seasoning in the last. All were great (had to nibble after they baked). It never really occurred to me that it would be so easy to have frozen meatballs on hand like this. And much cheaper.

i doubled the recipe used 1/2 the salt then added cajun spice they were very moist and great tasting thank you for this
