Jazz up boring meatballs! These are made with ground beef that is mixed with fajita seasoning mix, egg, green onion, garlic, and colby jack cheese.


2 pounds lean ground beef
1 envelope dry fajita seasoning mix
1 green onion, finely diced
2 large eggs, beaten
2 cloves crushed garlic
1 cup finely shredded colby-jack cheese or Mexican cheese blend
Preheat the oven to 425 degrees F.
Combine the ground beef, fajita seasoning, green onion, eggs, garlic, and cheese in a bowl. Mix well, then form the meat into equal-sized meatballs.
Place the meatballs on a broiler pan or rack in a roasting pan. Place in the oven and bake at 425 degrees F for 20 minutes or until cooked through.
Serve on tortillas with any desired toppings, use in another recipe, or serve as appetizer meatballs with salsa for dipping.
Yes, just make sure not to overcook them as they will cook faster than beef and can more easily dry out.

Not sure why, but these sort of tasted like Greek gyro meat to me (which I love). Plus they're easy. Very, very good and I'll definitely be making these again.

What a fun and easy recipe! I usually avoid some of the sodium-heavy packaged seasoning mixes but this came in really handy for a quick dinner. Really great flavor and I loved having a little melty cheese in every bite. I wouldn't hesitate to make this one again!
