2 pounds lean ground beef
1 envelope dry fajita seasoning mix
1 green onion, finely diced
2 large eggs, beaten
2 cloves crushed garlic
1 cup finely shredded colby-jack cheese or Mexican cheese blend
Preheat the oven to 425 degrees F.

Not sure why, but these sort of tasted like Greek gyro meat to me (which I love). Plus they're easy. Very, very good and I'll definitely be making these again.

What a fun and easy recipe! I usually avoid some of the sodium-heavy packaged seasoning mixes but this came in really handy for a quick dinner. Really great flavor and I loved having a little melty cheese in every bite. I wouldn't hesitate to make this one again!
