Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

You'd never guess the base for this creamy treat was ricotta and cottage cheese. Along with honey and fresh berries, it makes a scrumptious and healthier summer treat.
2 cups fresh blueberries
8 ounces part-skim ricotta cheese
8 ounces low fat cottage cheese
1/3 cup honey
1 tablespoon vanilla extract
Rinse and dry the blueberries, removing any stems.
Combine the ricotta cheese, cottage cheese, honey, and vanilla in a food processor. Process until smooth.
Add the blueberries and process until well pureed.
Transfer the mixture to the canister of an ice cream machine and process as directed by the machine manufacturer. Store any leftover ice cream in an airtight container in the freezer.
If the ice cream is too hard after freezing, let it sit out at room temperature for a few minutes to soften before scooping.
For a smoother texture, puree the blueberries separately and then strain the pureed blueberries through a fine mesh sieve before adding them to the cheese mixture.
To boost the flavor, you can add a pinch of salt to the mixture to balance the sweetness of the honey.
You can use any type of fresh berries in this recipe, such as strawberries, raspberries, or blackberries. Just note that if the berries are more juicy than blueberries it may affect the texture of the ice cream.
You can use full-fat ricotta and cottage cheese if you prefer a richer and creamier texture.
Maple syrup or agave nectar can be used as a substitute for honey in this recipe.
The processing time in the ice cream machine can vary but usually takes around 20-40 minutes until the ice cream reaches a creamy, frozen consistency.
Yes, feel free to add in your favorite mix-ins like chocolate chips, chopped nuts, or even a swirl of fruit compote for added texture and flavor.
If you don't have an ice cream machine, you can pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until it reaches a creamy, frozen consistency.
Leftover ice cream can be stored in an airtight container in the freezer for up to 1-2 weeks. Make sure to let it sit out for a few minutes to soften before scooping.
You can add additional flavorings like lemon zest, cinnamon, or almond extract to the ice cream batter.
Using a combination of ricotta and cottage cheese adds richness and creaminess to the ice cream while also providing a slightly tangy flavor.
Food Processor: For blending the ingredients together to create a smooth and creamy ice cream base. If you don't have a food processor, a high-speed blender can also be used as an alternative.
Ice Cream Machine: For churning the ice cream mixture and freezing it to the perfect consistency. If you don't have an ice cream machine, you can place the mixture in a shallow container in the freezer, stirring every 30 minutes until frozen.
Freezer-Safe Container: For storing any leftover ice cream that is not immediately consumed. Make sure the container is airtight to prevent freezer burn.
Fresh Mint: Add some minced fresh mint to add a pop of color and a refreshing flavor to contrast with the creamy sweetness of the ice cream.
Lemon Zest: Sprinkle some lemon zest into ice cream for a burst of citrusy flavor that will brighten up the dish and bring out the fruity notes of the blueberries.
Toasted Almonds: Crushed toasted almonds sprinkled on top will add a crunchy texture and nutty flavor
Oatmeal Cookie Crumbles: crumble some oatmeal cookies over your blueberry ricotta ice cream.
Balsamic Reduction Drizzle: drizzle a balsamic reduction over your ice cream for a sophisticated flavor combination.
Wine Pairings
Riesling: The slight sweetness of a Riesling can balance out the acidity from the berries and the creaminess of the cheese in this refreshing treat. Look for one with notes of peach or apricot to enhance the fruity flavors.
Rose: A dry rose with its crisp, light body can be the perfect accompaniment to the fresh blueberries in this ice cream.
Prosecco: If you're feeling a little bubbly, a glass of Prosecco can add a touch of elegance to your ice cream. The fruity notes will enhance the berries' flavors.
Other Alcohol Pairings
Limoncello: A splash of Limoncello can add a bright, citrusy kick to your blueberry ricotta ice cream. The tangy lemon flavor will cut through the richness of the cheeses and the honey for a refreshing finish.
Vodka Soda: Keep it simple with a vodka soda. The neutral vodka won't overpower the delicate flavors of the ice cream.
Hard Cider: If you're a fan of a little fizz, a hard cider can bring a touch of apple sweetness to complement the blueberries. Choose a dry cider to avoid overwhelming the dessert with sweetness.
Non-Alcoholic Pairings
Lemonade: A glass of lemonade with its zesty, tart flavor can add a refreshing contrast to the creamy and fruity ice cream.
Iced Green Tea: An iced green tea can offer a subtle herbal note to your dessert experience. The light, grassy flavors can enhance the freshness of the blueberries.
Sparkling Water: A glass of sparkling water (especially with a splash of lemon) can act as a palate cleanser between spoonfuls of the rich and creamy blueberry ricotta ice cream.

I'd never heard of ricotta ice cream before so I tried it. I was surprised it got as creamy as it did. Very good recipe. Will try with other fruit next time too.

I used frozen chopped strawberries and splashed in some passion fruit rum. It's rich and creamy and wonderful!
