One taste and you'd never guess this rich, creamy, chocolatety ice cream was actually vegetarian.

2 pounds soft tofu, cut in cubes
1/2 cup cocoa powder
2 cups soy milk, well chilled
2 tablespoons vanilla
1 cup oil
1/4 teaspoon salt
2 cups sugar
Combine all the ingredients in a blender and blend until smooth (process in batches if needed).
Pour the mixture into an ice cream maker. Process as directed by the machine manufacturer. Serve immediately or store in an airtight container in the freezer for up to 30 days.
