These whoopie pies are a little taste of heaven. Mini kahlua cookies are sandwiched with a sweet cream cheese filling.
Cookies
1 box (15-18 ounce size) chocolate cake mix
3 eggs
1/4 cup Kahlua
1/4 cup cold brewed espresso
1/2 cup vegetable oil
Filling
1 package (8 ounce size) cream cheese, softened
1 container (15 ounce size) vanilla frosting
1 tablespoon white chocolate liqueur
Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
Combine the cake mix, eggs, kahlua, espresso, and oil in a large mixing bowl. Beat on medium speed with an electric mixer.
Drop the batter in 2 tablespoon sized dollops onto the parchment paper lined baking sheets. Spread each out to about a 2-inch circle (leave room between the circles). Place the baking sheets in the oven and bake at 350 degrees F for 7-8 minutes or until the cookies bounce back when touched lightly. Let them cool on the baking sheets for 2 minutes then transfer to a wire rack to cool completely.
Meanwhile, place the cream cheese, frosting, and white chocolate liqueur in another mixing bowl. Beat on medium speed with an electric mixer until fluffy. Refrigerate until ready to use.
When the cookies are cooled completely, spread the cream cheese filling on the flat side of half of them (about 2 tablespoons per cookie). Top with the remaining cookies, flat side down.
Store the cookies in an airtight container in the refrigerator.
