It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

12 ounces powdered sugar
1 1/4 ounce cocoa powder
2 tablespoons all-purpose flour
3 egg whites
8 ounces chopped pecans
Preheat oven to 300 degrees F. Line cookie sheet with parchment paper.
Place sugar, cocoa and flour in mixer bowl and beat until well blended. Beat in egg whites, 1 at a time, scraping bowl as necessary. Beat at high speed for 1 minute. Beat in pecans.
Drop by tablespoonsful onto sheets, leaving 2 inches between cookies for spreading. Bake 1 sheet at a time for 15 minutes, turning sheet around halfway through baking time. Remove from oven; cool on paper. Place cookies on paper in freezer; freeze for 1 hour.
Remove from freezer, peel paper off cookies. Store in an airtight container. These don't keep very long, so eat quickly -- as if that's a problem.

Guest Food on June 19,2008 commented that the Chocolate Cookie was nothing like Gottlieb's, but I have made them many times and share them with Savannah native friends, and we have all been happy. YOur recipe is the same as the Gottlieb's Cookbook's, which contains a disclaimer that recipes for home cooks are necessarily different and your results may not be identical. Commercial kitchens have access to products they don't sell at Publix. In any case, I find that I like a pinch of salt added to this cookie. Also, Gottlieb's were larger. I think they used a liquid sugar that made them spread more easily. I use more than a T of batter and spread them manually. They make me very happy!

other than the fresh baked breads...these cookies bring back fond memories of Gottlieb's.

Though these looked nothing like the Gottlieb's that I grew up eating, they are still quite yummy. This is one of the healthiest chocolate treats that can be made.
I followed this recipe to the "Tee" but, it was nothing like gottlieb's bakery chocolate chewies.
Why? How do you feel it was different? Please elaborate so other visitors may be able to improve the recipe.
